breakfast of champions, cycle 3, day 24



There are those days when you wake up, realize you have lost an entire hour of sleep to the daylight savings time gods, spend fifteen minutes with the covers over your face wondering what has become of your slothful existence, what with Sleeping in until 9:30! and My god there are so many things you were planning to do today! and then, in a moment of inspiration, you decide to get up, do your taxes, and go for a six mile run just say, hell with it all. You are going to make orange chocolate chip pancakes and you are going to feel great about it.

So we did. And then, because let’s be honest, we felt pretty slothful, we broke a sweat cleaning the entire house. It is amazing the damage a shedding dog can do.

Meanwhile: <still holding my breath, waiting, in an anxious state of in between, hesitant to embrace the violence of hope, but also not wanting to indulge my own pessimism, wondering if I might be pregnant when I’ll get my period.> Thursday can’t come soon enough. Until then, pancakes for everyone[1]. Recipe after the jump.

Orange chocolate chip multigrain pancakes

Serves two, very generously
1 egg
¾ cup Siggi’s drinkable yogurt (or, ½ cup full fat yogurt plus a couple tablespoons of milk until you reach desired thickness
¼ teaspoon vanilla extract
1 tablespoon melted butter
¾ cup multigrain pancake mix of your choice (we used Arrowhead Mills)
1 tablespoon sugar
¾ tablespoon baking powder
¼ teaspoon salt
½ teaspoon orange zest
½ cup chocolate chips

Whisk egg, yogurt and vanilla in a large mixing bowl. Then whisk in melted butter. In separate bowl, mix dry ingredients (except chocolate chips). Slowly add dry ingredients to wet ingredients. Add in chocolate chips until just combined.

Melt a tablespoon of butter in a skillet over medium/medium-high heat. When hot, pour in pancake mix (about ¼ cup per pancake). When the pancakes start to show air bubbles, flip them for another couple minutes. Serve in a hearty stack, maple syrup optional (but let’s be honest, once you’ve added chocolate chips to a breakfast food, all bets are off).

  1. 'The violence of hope' is a totally apt way to describe it. At the same time (inappropriate segue alert), these pancakes look amazing! I'll totally try these this weekend. And I'm all for distraction during the waiting...I tend to bake a LOT while a) waiting for Day One, or b) avoiding work.

  2. This sounds like a lovely Sunday. Don't judge yourself for it! (I say this even though I know that I do, often, judge myself for non-productive weekends.) Those pancakes sound delicious. The mouth's watering.
